DVD Converter change video size from 720x480 to 1920x1080

I have DVD Converter Ultimate 4.0.0.102

I am converting my "Jaws" DVD as MP4 (Mpeg4+AAC) and the image size defaults to 720x480. I want to change it 1920x1080 but I can't seem to find the spot to make the adjustment. I expected the "Video settings" screen to provide a simple way to make the change but no luck.

Where can I change the default video image size?

In a previous post, someone said to create a custom profile. However, I don't find any options for profiles.

That is simply because DVD does not support FullHD.
DVD Video resolution (maximum) 720×480 (NTSC) 720×576 (PAL)

So there is no way to force an upscale on the MP4 video resolution so the resulting video is larger on my screens (iPad, Apple TV)?

Sure there is, but not with ConvertXtoDVD.
VSO has other products for that.

What other VSO product will let me do the upscaling?

For example ConvertXtoHD, ConvertXtoVideo Ultimate.
Mostly depends on your sources, but those can do it.
